Cooked red beets
Walnuts
Salad greens
Soft goat cream cheese (plain or with herbs)
Olive oil
Balsamico vinegar
Salt 'n peppa

Directions:
Directions:
Cook beets.
Roast walnuts in the pan (no oil just as they are!)
Do keep an eye on them, it's happened before that I forgot those nuts on the stove... it stinks AND you have to start all over again...
Once your beets are ready, hold them under running cold water and peel off their skin with your fingers- it'll come off easily.
Cut beets into cubes and toss them into the salad.
Sprinkle walnuts on top.
Crumble goat cream cheese on top with finger (since it's so soft, cutting it with a knife is not very helpful and also quite messy- that way you get to lick your fingers:)).
Now add olive oil and balsamico, salt 'n peppa ENJOY!
