4 eggs separated
3/4 cup sugar
3/4 cup cake meal
1/4 tsp salt
lemon rind, grated
orange rind, grated

Directions:
Cream yolks until light. Add sugar slowly and cream well. Add sifted cake meal with salt. Add orange and lemon rinds. Line a cookie sheet with greased wax paper. Pour mixture on lined cookie sheet. Bake 375F for 10 minutes. Use a clean dish towel and sift powdered sugar onto it. Turn cake onto the dish towel. Fill the cake with choice of filling (whipped cream or preserves). Roll the cake longways then refrigerate. Slice and serve.
