1 cup shortening
1/2 cup brown sugar
1 egg
1 tbsp water
2 cups carrots, grated (use large grater)
1 1/2 cups flour
1/2 tsp baking soda
1 tsp baking powder
1/2 tsp nutmeg
1/2 tsp salt
1/2 tsp cinnamon

Directions:
Directions:
Mix above ingredients and place into a greased ring mold. Set in refrigerator overnight or at least 5-6 hours. When ready to bake, remove from refrigerator 1/2 hour before baking.
Bake at 350F for one hour. When ready to serve, turn out of mold onto large round platter. Fill center with peas.
(note: use 3 cups grated carrots and 1 cup flour)
