3 medium size ripe avocados
2 tbsp lemon juice
1/2 tsp salt
1/4 tsp pepper
16 oz sour cream
1 package taco seasoning mix
2 cans refried beans
1 cup onion, chopped
2 cups chopped tomatoes
2 cans pitted ripe black olives, chopped
2 cups shredded cheddar cheese
large round tortilla chips

Directions:
Directions:
Peel, pit and mash avocados in medium bowl with lemon juice, salt and pepper. Combine sour cream and taco seasoning mix in bowl.
To assemble: spread refried beans on a large shallow serving platter, top with seasoned avocado mixture, layer with sour cream - taco mixture. Sprinkle with chopped onions, tomatoes, and olives, cover with cheese. Serve chilled or at room temperature with round tortilla chips
