"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Directions:
Cover and refrigerate mixture an for an hour or more before dropping dollop of dough on baking sheet covered with parchment paper or silicone bake sheet. Depending on how your over heats, bake on middle or upper middle rack. You do not want the bottoms of the cookies to get too brown.

Bake on 375º for 12ish minutes. It is better to slightly under bake than over baked. My oven runs hot so I set my oven to 360º.

Personal Notes:
*Over the years I believe the brown sugar has changed, although C&G denies any changes but the cookies cannot maintain thickness and chewiness without adding as much as 1/2 to 1 cup additional Original Oatmeal to this recipe. You must refrigerate for at least one hour.
