2-3 lb USDA Choice Tri-Tip, trimmed
1 cup Pappy's seasoned salt
1 tubs. granulated garlic
1/4 cup of Lawrey's seasoned salt
1 tbs. Montreal steak seasoning
Pepper to taste

Earth Grain or San Francisco Sweet French Rolls
Butter

Condiments:
Romaine lettuce
Thinly sliced tomatoes
Cheddar cheese slices
Thinly sliced red onions or New York style: saute in butter
Mayonnaise
Brown Mustard

Create a dry rub with the seasoning salts, garlic and pepper. Rub onto tri-tip and marinate overnight in the refrigerator.

BBQ on the grill approximately 40 minutes on low: 10 minutes on each side. After grilling on the second side, wrap the tri-tip in heavy duty aluminum foil. Place back onto the grill for 10 minutes on each side.

Remove meat from the frill and let stand for 10 minutes on a platter (to catch juices) before carving. Slice very thin across the grain. While you are cooking the meat, do not puncture the meat in any way. Use tongs to handle the tri-tip. Place sliced meat in juice for serving.

While the meat is resting, butter and grill the buns.
