3 chicken breasts, cooked OR rotisserie chicken (shredded)
1 small onion, minced
1 can cream of chicken soup
1 can cheddar cheese soup
1 small can enchilada sauce, hot or mild
1 small can diced green chilis
1 can chicken broth
1 can diced tomatoes
Toppings: shredded sharp cheddar, fried tortilla strips, sour cream, chopped cilantro

Directions:
Directions:
Saute minced onion in extra virgin olive oil until soft. Add the rest of the ingredients to a large pot and simmer 1 hour. You can substitute 1 c. of Pace salsa for the enchilada sauce depending on how spicy you like it. Top with sharp cheddar cheese, fried tortilla strips, sour cream, and cilantro.

You can use leftover turkey too. This recipe is very similar to Max & Erma's tortilla soup, my favorite!
