Ingredients: CRUST 1/3 c. butter, softened 1/3 c. sugar 1 c. all-purpose flour FILLING 4 pkgs (8 oz. each) cream cheese, softened 1 c. sugar 1 tsp. vanilla extract 4 eggs, slightly beaten 1/4 c. lime juice 1 pkg (10-12 oz.) white chips, melted and cooled

Directions: Place a greased 9 inch springform pan on a double thickness of heavy-duty foil (about 18 inches square. Securely wrap the foil around the pan; set aside. In a small bowl, cream the butter and sugar for the crust until light and fluffy. Gradually add the flour, mixing well. Press onto the bottom of a greased springform pan. Place on a baking sheet and bake at 350 º. for 12 minutes. Cool. In a large bowl, beat the cream cheese, sugar, and vanilla until well blended. Add eggs and beat on low speed just until blended. Transfer half of the mixture into another bowl and stir in lime juice. Add the melted chips to the remaining mix. Pour the white chocolate mix on the bottom of the crust and top with lime mixture. Place springform pan in a large baking pan and add 1 inch of hot water to larger pan. Bake at 350 º. for 45-50 minutes or until center is just set and the top appears dull. Remove pan from water bath and cool for 10 minutes. Run a knife around the edge of the pan, remove foil, and let cool for 1 hour. Refrigerate over night. Remove pan and serve. |
