1 1/2 c. flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas
3/4 c. white sugar
1 egg, beaten
1/3 c. melted butter or canola oil
TOPPING
1/3 v. brown sugar
2 Tbsp flour
1/4 tsp cinnamon
1 Tbsp butter

Mix flour, soda, baking powder, and salt in a medium sized bowl. In another bowl, cream sugar and egg. Then add mashed bananas and butter (oil) to the eggs and sugar and mix together. Add to the dry ingredients stirring just enough to moisten. Fill muffin tins 3/4 full.
Mix brown sugar, flour, and cinnamon together in a small bowl. Cut in the butter until crumbly. Top muffins. Bake at 350 º.for approximately 18-20 minutes.
