1 egg per person 8 okra pods per person, sliced 2 tablespoons minced onion per person Salsa (optional) Shredded cheese (optional) Seasoning to taste
Saute' okra in a small amount of olive oil about 2 minutes Add onions and saute' about 2 additional minutes Scramble eggs and pour over okra Stir until eggs are cooked Season to taste, and top with salsa or cheese, if desired
