1 pound ground pork
1 cup shredded carrot
1 med onion diced
1 bunch of scallions, chopped
1 egg
1 tsp salt
1 T ground pepper
2 T soy sauce
1 package lumpia/egg roll paper
(must get the ones sold in Asian/Filipino stores)
1 cup vegetable oil ( more oil if you are going to deep fry)

Directions:
Directions:
Mix all ingredients in food processor until well blended.
Place about 2 T of ingredients into lumpia/egg roll wrapper and wrap tightly.
Use water to seal wrapper edges.
Heat vegetable oil in frying pan. Fry until golden brown on both sides Or deep fry until golden brown.

Serve with sweet and sour sauce or sauce of choice.
