2 tbsp. shallots, chopped fine
2 tbsp. rice vinegar
1 tbsp. oil
1 tsp. ginger
tsp. sesame oil
1 bag of baby spinach leaves
1 naval orange, peeled, cut in rounds and cut again in thirds
1 avocado, cut into wedges.

Directions:
Directions:
Whisk shallots, oil, ginger, and rice vinegar and sesame oil. Add spinach and toss to coat. Add avocado and orange, toss and plate.
