4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 large cloves garlic, minced
1 lemon, juice and zest
Salt and pepper to taste
1/4 cup chicken broth or dry white wine
2 tablespoons butter

Preheat oven 400
Saute' garlic in olive oil about 30 seconds
Stir in lemon juice, zest, and salt and pepper and set aside
Arrange chicken in a buttered baking dish and pour the garlic mixture over the chicken
Cover and bake 15 minutes
Remove the foil and bake an additional 15 minutes
Pour the pan drippings from the baking pan into a small skillet Add the chicken broth or wine to the skillet and bring to a boil Reduce until the mixture has thickened like syrup
Whisk in the butter and pour over the chicken
