2 tbsp. red wine vinegar
1 tsp. hot sauce (e.g., Tabasco)
1 1/2 tsp. vegetable oil
1 clove garlic, minced
1/8 tsp. pepper
1 avocado, cut into 1/2" cubes
1 - 15 oz. can black-eyed peas, drained & rinsed
1 - 11 oz. can corn, drained & rinsed
2/3 C thinly sliced green onions
2/3 C chopped cilantro
1/2 lb. Roma tomatoes, coarsly chopped

Directions:
Directions:
Combine first 5 ingredients in large bowl. Add the remaining ingredients. Add salt and additional vinegar to taste.

Can serve as appetizer with chips.
Can serve as salad by adding shredded cabbage.
Can serve as side relish.
