1 lb. dried kidney beans
2 lg. onions, chopped
2 stalks celery, chopped
1 green pepper, chopped
1 clove garlic, minced
2 tsp. salt
1/2 tsp. pepper
1/4 c. fresh parsley, chopped
1 - 2 lbs. smoked sausage
Hot cooked rice

Directions:
Directions:
Sort and wash beans. Combine beans, onion, celery, pepper and garlic in a Dutch oven; cover with water and bring to a boil. Reduce heat, cover and simmer 2 - 2 1/2 hr. or until beans are tender and a thick gravy has formed. If necessary, add more water to prevent t beans from sticking. Stir in salt, pepper and parsley. Cook sausage and cut into serving pieces. Serve over hot rice.
