1 pound skinless chicken tenders
1 tablespoon dried minced garlic
1 lemon, juice and zest
1 15 ounce can artichoke hearts, drained
1 15 ounce can stewed basil, garlic and oregano tomatoes
2 tablespoons olive oil
Sea salt and pepper

Directions:
Directions:
Over medium high heat, saute' the chicken breasts in olive oil
When chicken is browned, add the minced garlic and saute' another 2 minutes
Squeeze the juice of the lemon over the chicken, stirring to remove the pan drippings
Reduce heat to low and add the stewed tomatoes and artichoke hearts
Simmer 5 to 10 minutes to blend flavors
Salt and pepper to taste
To enhance the lemon flavor, garnish with lemon zest
