Turkey giblets
1/2 stalk celery, chopped
1 medium onion, chopped
Cornbread (double recipe)
Several pieces of stale bread
2 eggs
Salt, pepper, parsley and basil to taste

Directions:
Directions:
Cook turkey giblets in enough water to cover for 45 - 60 min until tender. Remove from water and set aside. Save the giblet water. Cook celery and onion in giblet water until tender. Crumble cornbread and bread in a heavy pot. Add chopped giblets, onion, celery, cooking water and juice from the turkey. Add 2 eggs and stir until thoroughly mixed. Season to taste. Bake at 350º.
