Ingredients:  
3 carrots grated
3 ribs celery chopped fine
1 lg. onion chopped fine
2 cans chicken broth
1 stick oleo
2 cans cream of potato soup
1 lb. velveeta chopped
8 oz carton sour cream

Directions:
Directions:
1. Sauté carrots, celery & onion in oleo.
2. Add broth & simmer uncovered 30 min.
3. Add potato soup & cheese & simmer 10 min
4. Just before serving add a dollop of sour cream.
*Can be served in scooped out soup buns
*Be sure to stir often or it will stick
