3 medium or large sweet potatoes
2 T. olive oil
1 tsp sea salt
dash of cinnamon (optional)
rosemary (optional)

Directions:
Directions:
Quarter each sweet potato, then slice the sections lengthwise, creating pieces the size of large steak fries. Place slices in a bowl and toss with olive oil. Add salt and either cinnamon or rosemary if desired. Spread fries in a single layer on two cookie sheets. Place in a 425 degree oven (preheating is not necessary) and bake 20 minutes. Remove cookie sheets from oven and flip fries with a spatula or tongs, then bake an additional 15 minutes or until fries are lightly browned with crispy edges. Cool on a baking rack to maximize crispness. Serve with ketchup or other dipping sauce.
