Ingredients:  
3 or 4 medium size potatoes diced into 1/2 inch cubes
1 medium onion, diced
2 cups leftover cooked roast beef cut into bit-sized pieces
Salt and pepper to taste
1 T. butter

Directions:
Directions:
Cover potatoes and onions with water and boil until crisp.
Add cut up beef and butter and simmer until potatoes are tender. Add a little water if it gets too thick.

Serve with green salad, corn or vegetable of your choice and lots of bread and butter. Eat and enjoy!
