¼ c. cornstarch
¼ c. lemon juice
1 c. sugar
1 tbsp. butter
1½ cups cold water
1 baked 9” pie crust
3 egg yolks, slightly beaten
3 egg whites
1 lemon peel, grated
¼ c. sugar

Directions:
Directions:
Preheat over to 350°. Combine cornstarch and sugar in medium sauce pan. Stir in water and egg yolks and whisk until smooth. Bring mixture to a boil; reduce heat and simmer 1 minute, stirring constantly until thickened. Remove from heat, stir in lemon peel, lemon juice, and butter. Spoon the mixture into the crust.

Beat egg whites in small bowl with a mixer at high speed until foamy. Gradually, add the sugar and beat until stiff peaks form. Spread evenly over pie, sealing the edge of crust. Bake for 15-20 and cool on a wire rack.
