1 medium onion chopped
1 tsp salt
1 celery stalked, sliced
½ tbsp pepper
1 carrot sliced
1 tsp. dried rosemary
1 sprig parsley
1 small bay leaf
1 can condensed chicken broth
4 chicken breasts
¼ c. sliced almonds
¼ c. honey

ONE DAY AHEAD, in a 6 qt. kettle combine onion, celery, carrot, parsley, salt, pepper, rosemary, bay leaf, broth, and 1 cup of water. Bring to a boil and add chicken breasts. Reduce heat and simmer, covered, for 30 minutes or until tender. Cool and refrigerate all in kettle overnight (covered.)

THE NEXT DAY, cook breasts in broth over low heat until heated through (about 10 minutes.) Arrange almonds in single layer in shallow baking pan and broil until brown. Remove chicken from broth, and place skin side up in large, shallow baking pan. Broil 1 minute, or until brown. Spoon 1 cup of broth into pan. Brush chicken with honey, and broil 1-2 minutes longer, brushing several times with honey until chicken is glazed and golden. Sprinkle the broiled almonds onto the chicken and serve warm.
