1/2 c. flour
1-3 tsp. salt
1/4 tsp. pepper
1 cut up chicken
2-4 tbsp. hot shortening
1 3/4 c. pineapple or orange juice
1 3/4 c. water
6 tbsp. vinegar
6 tbsp. brown sugar
3/4 c. or less catchup
2 or less chopped onions
2 c. pineapple chunks (optional)
1 medium bell pepper, cut up (optional)

Directions:
Directions:
Combine in a bag and shake to coat: flour, salt, pepper and chicken. Fry chicken shortening. In a separate bowl combine and pour over chicken: pineapple or orange juice, water, vinegar and brown sugar catchup and chopped onions. Bring to a boil, cover, simmer 1 1/4 hours until the chicken is tender and sauce is thickened. Add pineapple and bell pepper, and simmer 5 minutes more and serve over rice.
