3-4 c. cooked chicken, cubed (optional)
1 pkg. fresh spinach, large stems removed
1 13oz. container Wegmans Alfredo sauce
1 tbsp. Wegmans basting oil (seasoned oil)
salt and pepper
1 head of cauliflower, broken into florets
1 c. seasoned bread crumbs, divided
1 c. shredded part skim mozzarella cheese

Directions:
Directions:
In large mixing bowl combine chicken, cauliflower and spinach. Season with salt and pepper. Add the Alfredo sauce, the mozzarella and 1/2 the bread crumbs and mix well. Pour into greased 9x13" baking dish. Bake uncovered at 350º for 40 minutes, stirring halfway through baking time. Then top with remaining bread crumbs mixed with basting oil and bake 15 minutes more.
