2 lb. English Cut Roast
1 tsp. oregano
1 1/2 T. tabasco
3 cloves garlic or 3/8 tsp. garlic powder
1 1/2 c. dried pinto beans or 1-2 cans of pinto beans
3 tsp. salt
1 tsp. thyme
1 medium onion, diced
1 can Rotel tomatoes with chilies

Directions:
Directions:
Put all ingredients in crockpot and cover with water. Bring to a boil and cook at least 6 hours. The longer it cooks the better. Cook on high for at least 6 hours, then turn to low until ready to eat. When meat is done, meat should be shredded and the fat removed.

Serve over corn chips or tortilla chips. Top with grated cheese, chopped onion, lettuce, tomatoes, hot sauce, or whatever you like!
