1 bag of dried split green peas
1 ham bone
1 celery stalk
1 tbl. of celery leaves
2 carrots
1 onion
(1 potato)

Directions:
Directions:
Cover peas in cold water and allow to soak for at least 2 hours. Discard water.

Combine split peas and about 8 cups of water. Add ham bone, sliced onions, celery, celery leaves and chopped carrots.

Bring to a slow boil. Add a diced potato if you'd like when the soup comes to a boil. Simmer for about 45-minutes to an hour.. Add salt and freshly ground pepper. Occasionally stir while simmering.
