portabello mushroom caps
fresh spinach leaves
blue cheese chunks
fresh garlic, minced
extra virgin olive oil
salt and pepper for seasoning

Directions:
Directions:
Brush a small amount of olive oil on the inside of the mushroom cap. Add a pinch of garlic, salt and pepper. Pile spinach leaves on cap - about six leaves per cap. Mound blue cheese chunks on spinach leaves.

Put directly on grill at medium to medium-high heat for 15 minutes. Spinach leaves will wilt and cheese will turn gold brown. Caps can be placed on the grill at the same time as the meat. The caps do not need to be turned, so only the meat needs attention. They will usually cook in the same amount of time.
