Ingredients:  
1 large pork tenderloin - 2-3 llbs.
1/2 onion sliced
1/4 cup vegetable or oilve oil
1/2 cup dry white wine
Sauce:
1 large can whole tomatoes
salt and pepper
1 clove garlic
1 pinch of cinnamon
Stuffing:
1 cup each of raisins diced ham,crumbled bacon and sliced almonds - mixed

Directions:
Directions:
1. Filet the tenderloin and place stuffing evenly; wrap and tie with butcher string.
2. Heat oil in large/heavy saucepan. Brown pork on all sides. Add onions and continue cooking until they are translucent.
3. Add sauxce, cover and continue cooking on medium heat for 30 minutes or until temperature reaches 160º. Remove pork from the pan to test for 15 minutes.
4. Deglaze pan with white wine and add to sliced tenderloin.
