3 large eggs, beaten
3 tbsp. Tabasco sauce
1 medium onion, sliced 1/4 inch thick
2 garlic cloves, peeled and smashed
1 chicken, cut into pieces
1/4 cup Wondra flour
1/4 cup fine yelllow cornmeal
3/4 tsp. coarse salt
1/4 tsp. paprika
1/8 tsp cayenne pepper
1/4 cup extra virgin olive oil for brushing

Directions:

1. Mix eggs, tabasco sauce, onion and garlic in a large bowl. Add chicken pieces and toss to coat well. Cover and refrigerate for at least 1 hr. or up to 8 hrs.
2. Preheat oven to 450º. Place a rimmed baking sheet on the center rack of the oven.
3. Whisk flour, cornmeal and seasonings in a medium bowl. Remove chicken from marinade and coat in the flour mixture, shaking off excess.
4. Place chicken on preheated sheet and bake for 20 minutes.Remove and brush lightly with oil every 10 minutes until chicken is dark golden brown - - about 30-40 minutes. Transfer chicken to a wire rack to cool.
