1 1/2 c. unsalted, dry-roasted peanuts
1 c. granulated sugar
1/2 c. light corn syrup
1/2 tsp. salt
1 Tbsp. butter or margarine
1 tsp. vanilla extract
1 tsp. baking soda

Directions:
Directions:
In a glass mixing bowl, combine peanuts, sugar, corn syrup and salt. Cook on high (100% power) 7-9 minutes until mixture is bubbling and peanuts are brown. Quickly stir in butter and vanilla; cook on high (100% power) 2-3 minutes longer. Add baking soda; stir quickly just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool about 15 minutes until firm. Break peanut brittle into pieces; Store in airtight container. Makes about 1 1/4 pound.
