1 lb. lean ground beef
1 large onion, chopped (1 cup)
1/2 c. uncooked instant rice
1/2 tsp. salt
1/2 tsp. pepper
1 can (10 3/4 oz.) condensed tomato soup
1/4 c. water
4 c. coleslaw mix or shredded cabbage

Preheat oven to 400. Cook beef and onion in 10-inch skillet over medium heat 8 to 10 minutes, until beef is brown; drain. Stir in remaining ingredients. Spoon into ungreased 2-quart casserole. Cover and bake 45 minutes or until hot and bubbly.
