3 medium eggplant
1/2 cup butter
1/2 cup grated onion ( optional)
3 eggs
1 cup milk
1 cup cracker or bread crumbs
1 cup grated cheese

Directions:
Directions:
Cook the eggplant , mash and drain .
Add butter , onion and salt.
Beat eggs with milk, stir into eggplant mixture . Stir in the crumbs and 1/2 the cheese .
Top with remaining cheese .

Bake at 350 for 45 min .
