1 C sugar
1 Tbsp. soft butter
3 1/4 C all-purpose flour
3/4 tsp. nutmeg
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2/3 C. buttermilk

Directions:
Directions:
In a large bowl beat eggs, sugar, and butter until fluffy. Sift dry ingredients and set aside. At low speed, gradually beat buttermilk in egg/sugar mixture. Add flour mixture gradually; beat at low speed just until combined and smooth. Cover bowl with plastic wrap and refrigerate one hour. Roll dough out to 1/2 inch thickness. Cut doughnut shapes with a doughnut cutter. Place on a lightly floured piece of wax paper. Let rest for 5 minutes.
Heat lard/oil to 360 degrees in a deep fryer or heavy pan, four inches deep. Fry 3 or 4 doughnuts at a time, turning them with a fork or tongs when one side is browned. Brown other side. Remove with tongs and place on paper towels to drain. Dust with sugar if desired.
