1/4 cup butter
1/4 cup flour
1 tsp salt
dash of dry mustard and cayenne pepper
1 1/2 cup milk
1/2 pound sharp American cheese - grated
6 eggs - separated

Directions:
Directions:
Melt butter in a double boiler over medium heat. Blend in flour & spices. Add milk gradually. Cook and stir until thickened. Add cheese. Cover, stirring frequently until cheese is melted. In a separate bowl, whip egg whites until they stand tall. Beat egg yolks completely and cheese sauce slowly to egg yolks, mix. Fold in egg whites. Bake one hour at 300º. Be very gentle..no slamming of doors or it will fall.
