1 pkg. frozen sugar cookie dough
1 jar Musselman's key lime pie filling
1 pint heavy whipping cream

Preheat oven to 350º.

Divide the dough for one sugar cookie in half, making two pieces. Press each piece into a mini muffin tin. Continue to divide dough until the muffin pan is full. Bake at 350º for 10 - 12 minutes, until browned, but still soft. Remove from oven and press the bowl of a large tablespoon into the warm cookie to make an indentation. Let cool for a few minutes, then tap out of pan.

When cookie tarts are completely cooled, spoon key lime pie filling into a pastry bag. Squeeze into tarts and chill. Make whipped cream and load into pastry bag with decorative tip. Squeeze a small decorative dollop on top of each tart.

To make whipped cream: Beat whip cream in chilled bowl with chilled beaters until soft peaks form. Gradually beat in 1/3+ cup of sugar and 1 teaspoon vanilla. Continue to beat until stiff peaks form.
