3 eggs
1/3 cup Bisquick
1-1/2 cups milk
1 cup chopped ham (I use 1lb cooked bacon)
1 cup sliced mushrooms (I use 1pkg unthawed cut broccoli)
1 cup shredded cheese

Directions:
Directions:
Mix eggs, margarine, Bisquick, milk in blender for 30 seconds. Add a little shredded cheese to the mixture. Pour into 9" pie pan. Mix in the ham (or cooked bacon) and vegetable (mushroom or broccoli). Sprinkle shredded cheese (lots of it) on the top. Bake (uncovered) at 350 degrees for 40 minutes

This recipe is an absolute favorite for breakfast or a lunch. Our favorite is to replace the ham with 1 lb. of cooked bacon, and use 1pkg of frozen broccoli that's been unthawed.
