1 (16-20 oz.) bag broccoli, cauliflower, carrot
mix, thawed and drained
1 can "healthier" cream of mushroom soup
1 c. shredded Swiss cheese
1/3 c. reduced fat sour cream
1 jar chopped pimento, drained (optional)
1 can French onion rings
1/8 tsp. pepper



Directions:

Combine veggies, soup, sour cream, 1/2 cheese, pimento, 1/2 onion rings and pepper. Pour into greased 1 qt. baking dish. Bake covered at 350 for 30 minutes. Top with remaining cheese and onion and bake uncovered 5 minutes more.

Can be varied using different veggies, soups and cheeses. Can also use croutons instead of onions to save calories.

This is similar to the usual green bean casserole but much better. One friend who isn't fond of veggies served himself a generous second helping.
