4 tablespoons olive oil
1 lean brisket of beef about 8 pounds
2 cloves garlic minced
5 medium onions, sliced
1 1/2 cup red wine
2 tablespoons tomatoe paste
2 tablespoons brown sugar
1/4 cup hot water
salt and pepper to taste.
4 medium carrots, peeled and thickly sliced
2 parsnips, peeled and thickly sliced
1/4 pound pitted prunes.

Pre-heat over to 350
In a large skillet, heat the oil over medium heat. Brown the brisket on all sides and set aside. In the same skillet, saute the garlic and onions until
brown. Transfer to a large roasting pot and place the meat on top, fat side up. Pour in half the wine. Cover and bake for 30 minutes.

Remove from the over. in a bowl, combine the tomato paste, brown sugar and hot water to make
a paste. Spoon this mixture over the brisket.
sprinkle with salt and pepper. Surround the meat
with the carrots, parsnips, and the remaining wine.

Reduce the heat to 325*F cover, and bake until tender. 2 1/2 to 3 hours. Adding the prunes during the last 30 minutes. To serve , transfer the brisket to a deep platter and slice against the grain. Arrange the vegetables and fruit over and around the meat.

You can substitute apple juice or beer for the
red wine. This flavorful entree will melt in your
mouth, it will be so tender it will fall apart in shreds.
