3 c. flour
2 c. sugar
1 t. baking powder
1 t. salt
1 t. pumpkin pie spice
1/2 t. baking soda
1/2 t. cinnamon
3 eggs
1 c. vegetable oil
2 t. vanilla extract
1 c. zucchini, grated
1 c. carrot, grated
1/2 c. ripe banana, mashed
1/2 c. raisins
1/2 c. nuts, chopped

Directions:
Directions:
In a mixing bowl, combine the first seven ingredients. Add eggs, oil and vanilla; mix well. Stir in zucchini, carrot, banana, raisins and nuts. Pour into 4 greased and floured 5 3/4 x3 x 2" loaf pans. Bake at 350º for 45-48 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes; remove from the pans to wire racks.

I am not real crazy about raisins, however, I really like this bread. It has such a good flavor-even if it does have raisins in it.
