3 lg White Sweet Potatoes
6 tsp Butter
6 tsp Flour
2 C Milk
2/3 C Brown Sugar
Salt and Pepper to taste

Directions:
Preheat oven to 350º. Peel potatoes and slice evenly but not too thin or thick. Put potatoes in greased 2 quart casserole dish. Melt butter in a separate pan on low heat and wait for the foam to subside. Add flour slowly and whisk between additions. Add milk slowly and whisk often (continuously if possible). Add brown sugar when sauce has thickened to look like a hollandaise sauce but not too thick to be stiff. Pour mixture over potatoes. Sprinkle salt and pepper over the top. Bake for 50-60 minutes until potatoes are tender.

Regular sweet potatoes can be substituted, but they may be too sweet. Reduce the amount of brown sugar used. Do not use yams!
