Creme Anglaise (see recipe)

Directions:
Arrange the chilled pears in serving dishes, singly or in a group. The pears should be upright. For an elegant presentation, stuff the inside of each pear with sponge cake (you can core the pear in such a way that the stem stays intact and the cake inside is a surprise). Spoon cold creme Anglaise around the pear, so that the pear is sitting in a little pond of creme. Drizzle chocolate sauce down the sides of the pear. A fresh mint sprig or some lemon zest makes a nice garnish.

I started making this as a Christmas Eve tradition when we lived in Lexington. It's elegant but not too heavy. It can easily be made vegan without the creme Anglaise.
