Rotini Salad Recipe

1 box Rotini
1 onion
1/2 cup olive oil
1/2 tsp minced garlic
1 carrot, sliced thinly
1 cup broccoli
1 cup peas
salt and pepper
1 cup water
2 cups cherry tomatoes, cut in half
5 chopped basil leaves
1/4 tsp dried oregano
1 Tbsp parsley
1 tsp mint
1 cup Parmesan cheese

Cook rotini according to the package. Slice onion into rings and sautee with garlic for 5 minutes in 1/4 cup olive oil. Add carrot, broccoli and peas; season with salt and pepper and sautee for an additional 5 minutes. Add a cup of water and continue simmering until vegetables are cooked through. Add the tomatoes. Drain pasta and toss with the sauce. Add the herbs, remaining olive oil, and parmesan cheese. Toss again.
