1 pkg dry yeast
1/4 c. water
2 c. milk, scalded
2 tbsp sugar
2 t. salt
1 tbsp shortening
6-61/4 c. flour

Directions:
Soften yeast in warm water (110º). Combine hot milk, sugar, salt, and shortening. Cool to lukewarm.
Stir in 2 cups of the flour; beat well. Add the softened yeast; mix. Add enough of remaining flour to make a moderately stiff dough. Turn out on lightly floured surface; knead till smooth and satiny (8-10 min.). Shape in a ball; place in lightly greased bowl, turning once to grease surface. Cover; let rise in warm place till double (about 1 1/2 hours). Punch down. Let rise again till double (about 45 min.).
Cut dough in 2 portions. Shape each in smooth ball; cover and let rest 10 minutes. Shape in loaves; place in 2 greased 8 1/2 x 4 1/2 x 2 1/2" loaf pans. Let rise till double (about 1 hour). Bake in 400º oven for 35 minutes or till done. If tops brown too fast, cover loaves with aluminum foil last 20 minutes.
