3/4 c. cornmeal
3/4 c. all purpose flour
2 tsp. salt
1 tsp ground black pepper
2 eggs
2 tbsp water
2 large green tomatoes
1/2 c. vegetable oil

Directions:
Directions:
In a large bowl, combine cornmeal, flour, salt and pepper. In another bowl, beat together eggs and water. Slice tomatoes 1/4 inch. Dredge tomato slices through cornmeal mixtures, then coat them (by brushing or dredging) with egg wash, then dredge them again through cornmeal. Arrange tomato slices on a plate, cover with plastic wrap and refrigerate for 30 minutes.
In a large skillet, heat oil over medium heat. Add the tomatoes one or two at a time and fry until brown on both sides, about 2 minutes per side. Drain on paper towels to remove excess oil. Serve immediately.
