1 lb. ricotta cheese
1/4 lb. mozzarella cheese, cut in small cubes
1/2 tsp. salt
1/4 c. grated Parmesan cheese
1 egg, beaten
Pepper to taste
1 lb. ziti, cooked and drained
6 cups spaghetti sauce

Directions:
Directions:
Combine ricotta, mozzarella, Parmesan, egg, salt and pepper. Layer in large casserole: 1/2 sauce, 1/2 ziti, 1/2 ricotta mixture, 1/2 ziti, 1/2 ricotta, 1/2 sauce. Bake at 350 for 40 minutes.

This recipe came from my friend Pat at the Episcopal Church Home. An accomplished Italian cook, she abandoned her family's traditional method in favor of this easy version. It goes together easily and makes a lot.
