Preheat oven to 375º
Salt and Pepper the roast, which should be room temperature. Place roast on rack in shallow pan. Roast ONE hour at 375. Turn off oven, but do not open the door.
If you do you louse up the whole process. Trust me, it works! Do NOT open the door.
Allow three hours in oven to complete cooking.
About 20 minutes before you want to serve, turn the oven back on to 300º to warm up the roast. Remove from the oven and let stand at least 30 minutes before serving.
