1 2/3 c. blanched almonds
3 large egg whites
1 c. sugar
3 oz semisweet chocolate, melted & cooled to room temp
7 oz sweetened shredded coconut

Directions:
Directions:
1) preheat oven to 350 degrees. Line 2 cookie sheets w/ parchment paper.
2) Grind almonds in processor, set aside. In a large bowl, beat egg whites until stiff. Alternately fold in sugar and ground almonds, then gently fold in melted chocolate and coconut. Drop from tsp onto sheets, leave ½” between cookies.

Cook 20 min
Yields 2 dozen
