1 2/3 c. blanched almonds
3 large egg whites
1 c. sugar
3 oz semisweet chocolate, melted & cooled to room temp
7 oz sweetened shredded coconut

Directions:
Directions:
1) preheat oven to 350 degrees. Line 2 cookie sheets w/ parchment paper.
2) Grind almonds in processor, set aside. In a large bowl, beat egg whites until stiff. Alternately fold in sugar and ground almonds, then gently fold in melted chocolate and coconut. Drop from tsp onto sheets, leave between cookies.

Cook 20 min
Yields 2 dozen
