4 ears corn, shucked and cut off the cobs
2 T unsalted butter
2 T minced peeled fresh ginger
2 large shallots, chopped
1/2 pound snow peas, trimmed and cut crosswise
1/2 t salt
1/8 t freshly ground pepper
1 T fresh lime juice

Directions:
Directions:
Melt the butter in a medium saute pan over medium heat. Add the ginger and shallots and cook until almost soft, 2 to 3 minutes. Add the corn, snow peas, salt and pepper and cook until just tender, 5 - 6 minutes, stirring often.

Stir in the lime juice, add more salt and pepper to taste.

Serve and Enjoy!

It's not just the beautiful yellow and green colors that I love about this dish, its the CORN! It's also easy and has a wonderful combination of textures. The corn and the snow peas are a little crunchy and taste fresh and summery.
