1 fryer (3 lb.) cut into parts and presalted with 2 tsp. salt
1 medium onion, sliced
1 clove garlic, crushed
1 bell pepper, cut into small chunks
2 Tbsp. curry powder
1 cup chicken stock
2 tsp. soy sauce

Directions:
Directions:
In a large pot, heat 3 Tbsp. salad oil, add chicken parts and brown slightly. Remove and add about 1 Tbsp. oil in pot and stir fry for 2 minutes the onion, garlic, bell pepper and curry.

Add the chicken stock and soy sauce. Return the chicken parts to the pot, stir, and cover.

If desired, may add a few small peeled potatoes. Cook at medium heat for about 30 minutes until chicken is tender. If thicker gravy is desired, add a paste of 1 Tbsp. cornstarch mixed with 1 Tbsp. water. Gradually stir in until desired consistency.
