3 eggs (more if you like but I like my eggs not so eggy :0)
1 tbsp. olive oil
1 sprig rosemary, chopped
1/2 c. cheddar cheese, grated
1/2 onion, diced
3 c. spinach, fresh or frozen
Whatever else is leftover or convenient. Favorites include leftover chicken, frozen peas, frozen corn, peppers, and mushrooms

Pour olive oil in skillet. Add onions and cook until onions soften. Add eggs, rosemary, spinach and any other desired ingredients. Stir frequently to prevent eggs from setting unscrambled. Add cheese and continue stirring until melted and fully integrated.
